Cygnet Restaurant
at QT Singapore recently launched a new set lunch menu led by newly appointed Executive Chef Fabrice Mergalet. The refreshed menu offers a selection of starters, mains and desserts that reflect the chef’s produce-first approach. Available on weekdays from 11.30am to 2.30pm, the two-course set is priced at $48, while the three-course option is $58.

Seafood Platter 4/5

I found the starter selection particularly well curated, with a good mix of lighter and more substantial options. To start, the Seafood Platter was a beautiful showcase of New Zealand Oysters, Prawns and Chipotle Lobster Rolls (minimum two people, +$15pp). The star of the platter was the plump New Zealand oysters, which stood out for their bright taste and very clean finish.

Lobster Rolls

The Lobster Rolls were mini but satisfying, with a chunky filling tucked into buttery brioche.

Steak Frites 4.5/5

For the mains, the Steak Frites (+$10) features a Frimsa grass-fed minute steak. This grass-fed Argentinian beef is prized for its robust, distinctly beefy flavour, and here, its rich flavour was complemented by a peppercorn sauce.

Smashed Wagyu Burger 5/5

The Smashed Wagyu Burger definitely stole the show with its mouthwatering appearance and full-on flavours. Piled between two fluffy brioche buns were robust, juicy double Wagyu patties, topped with slices of pastrami and cheddar. Sauerkraut and diced onions helped to balance the richness.

Lemuel Chocolate Fondant 4/5

For dessert, the Lemuel Chocolate Fondant was a decadent chocolate cake with a slight molten centre, contrasted by pepper-berry salted caramel ice cream and chocolate crumbs for texture. The Tiramisu was an interesting take, served with mascarpone affogato, although I found it slightly too sweet.

The restaurant also offers a selection of wholesome sides as add-ons, including Miso Creamed Spinach, Charred Broccolini, Local Mushrooms and House Salad. Other set-menu options include King Crab Tagliatelle and Sea Bream and Chicken Milanese, giving diners a good range of choices for a weekday lunch.
